I spent the Summer of 2012 working in Houston. Most of that time was spent between office building and hotels with plenty of sweaty commutes in between.
At night, I had a small group of friends that liked to meet up on Washington Avenue. My favorite place of all was a gastropub called BRC which had a great menu, great drinks, and a terrifying bathroom. My favorite thing was the bacon jam. They would serve it on burgers and sandwiches, or as a side for biscuits. I talked them into blending it into a milkshake one time, which I wouldn’t recommend.
When BRC closed, I was heartbroken. However, one faithful night in Dallas, TX I was at a wedding and struck up a conversation with someone from Houston. I mentioned my summer working there and the bacon jam from BRC. It turns out that this stranger used to work there! He gave me the secret bacon jam recipe and I’ve been making it ever since.
The recipe is simple, having only three ingredients. I had tried other bacon jam recipes that have onions and dozens of different spices, but the simplicity to this recipe is key. I’ve made a couple of tweaks to the ratios and scaled it back for a reasonably sized batch (it still yields a lot, but it won’t last long).
- 2 pounds of bacon
- 2 cups of sugar
- 2 teaspoons of crushed red pepper flakes
- 1 cup of water
Cut your bacon into small pieces and cook until done.
Drain the bacon. Reserve the grease for Bacon Washed Bourbon.
After draining, add your bacon back to the pot and put on medium heat. Add two cups of sugar.
Add one cup of water and still until all of the sugar has dissolved.
Add two teaspoons of red pepper flakes
Bring the mixture to a low boil and allow it to cook for five minutes.
Remove from the heat and allow to cool to room temperature. The mixture will thicken as it cools.
Store in the refrigerator for up to five days. Serve on toast, biscuits, baguette, burgers, or sandwiches. If you are brave you can blend it into a milkshake. Bacon jam grilled cheeses are amazing.
